Tomorrow is Pancake Day, or Shrove Tuesday. So we wanted to share our favourite campfire pancake with you.
These are for dropped scones, the traditional Scottish pancake. They should be thick and fluffy and delicious. I have so many memories of making these with my dad growing up. We would heat up the griddle and make tons and tons of these. They are delicious on their own but you can also pop some butter, honey or jam on top to make them even more decadent.
Whilst we did cook these indoors as kids, as an adult I now cook them outdoors. There is no better campfire or camping breakfast treat. If I am away camping I tend to make up a few little bags with the dry ingredients and then just add the milk and eggs immediately before cooking.
- 220 g Self Raising Flour
- Pinch Salt
- 50 g Caster Sugar
- 2 Free-range Eggs
- 280 ml Milk
- knob of butter (for cooking)
